Ever since I was a little girl, I remember making zucchini bread with my mom. Forty years later, I still make this sweet bread and I continue to use the same recipe. This recipe is moist and delicious and also freezes well. Zucchini bread is great for breakfast and it also makes the perfect snack!
So here is the recipe….Enjoy! 🙂
WHAT YOU NEED:
1 cup sugar
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
HEAT oven to 350°F.
IN a mixing bowl combine flour, cinnamon, baking powder, baking soda, nutmeg, and salt.
In a separate bowl combine sugar, zucchini, cooking oil, egg, and lemon peel. Mix well. Add flour mixture; stir just till combined.
POUR batter into a greased bread loaf pan (I used the smaller pans and made mini loaves).
BAKE for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan and cool thoroughly. Makes one 8″ x 4″ loaf.
